After a year of travel restrictions, many are missing their foodie culture fix. In fact, research from Gousto finds that over half (58%)* of Brits say that one of their favourite things to do is experience new cultures through food.
The research also found that Korean cuisine is the one that people most want to learn to cook at home, and with searches for ‘Korean Fried Chicken’ up by over 100%** this year – it’s clear that the moreish, crispy fried chicken is a winner.
To celebrate the launch of Gousto’s new Seoul Train recipe range, Senior Recipe Developer Jordan Moore has shared his top tips for creating the ultimate Korean Fried Chicken at home.
Fasten that apron and get immersed in the bold spices, punchy pickles and fiery ferments of Korean cuisine.
Don’t be afraid to double fry.
Jordan says; “If you’re looking for EXTRA crispy chicken, double fry it! Once you’ve got the chicken to a nice and crispy, transfer it to a plate and crank the heat up as high as it will go. Return the chicken to the very hot oil for another minute or so and you’ll be left with super crispy pieces of chicken.”
It’s all about the crunch
Jordan says; “The key to really great Korean fried chicken is the approach to battering. First, coat in a thick batter made with soy and flour, before adding to a dry cornflour mix, which will provide more of a crunch than just dredging in flour.”
Let it drain
Jordan says: “To make sure the skin is extra crispy, drain on a wire rack over a tray lined with kitchen paper for a few minutes to allow the excess oil to drain off. If you are cooking in batches, place the tray (without the kitchen roll!) in a low heat oven to keep warm.”
Can’t handle the heat?
Jordan says; “Korean Fried chicken isn’t always about the heat! Another popular variant is garlic fried chicken, in which you’d fry off lots (and lots!) of chopped garlic, before adding honey and soy for the perfect glaze.”
Serve with a crisp lager.
Jordan says; “Korean Fried Chicken is ALWAYS served with beer, so much so that there is a word ‘chi-mek’ (chi from chicken, and mek from mek-ju (beer in korean)). We’d recommend pairing with a crisp lager, as the hoppy notes of an IPA will increase the spice from the fried chicken.”
