Baileys Brownies
Ingredients
For the brownies
- 220g (1 cup) caster sugar
- 150g (1 cup) plain flour
- 80g (⅓ cup) Baileys Cream Liqueur
- 70g (⅓ cup) dark chocolate
- 60g (¼ cup) butter
- 50g (½ cup) cocoa powder
- 2 eggs
- 1 tsp vanilla extract
- ¼ ts bi-carbonate soda
- Pinch of salt
For the chocolate frosting
- 150g (1 cup) icing sugar
- 45g Baileys Cream Liqueur
- 45g melted butter
- 25g (¼ cup) cocoa powder
- Pinch of salt
- Sea salt flakes
Method
- Preheat your oven to 170 degrees.
- In a saucepan, combine your butter and chocolate and heat until melted.
- After allowing the mixture to cool slightly, transfer your melted ingredients to a bowl before adding and whisking through the eggs.
- Add in your vanilla extract, sugar and Baileys and continue to whisk through.
- Sift over the flour, cacao powder and bi-carbonate soda, before adding the salt and folding in the chocolate mixture.
- Pour the mixture into your greased and lined baking tray and bake at 170 degrees for 20-25 minutes. Top tip: Allow your brownie mixture to cool for 20 minutes before frosting.
- For the frosting, combine and whisk your vanilla extract, melted butter, icing sugar, cocoa powder, salt and Baileys Irish cream together in a bowl.
- Spread the frosting over the brownies and sprinkle over your sea salt flakes for that finishing touch.
- Cut your brownies into squares and allow your sweet treats to cool completely before tucking in.

Boozy Chocolate Bourbon Brownies

Ingredients
- 60ml (¼ cup) Jim Beam Double Oak Bourbon Whiskey
- 32g (¼ cup) semi-sweet chocolate chips
- 200g (1.5 cups) plain flour
- 200g (1.5 cups) sugar
- 1 tsp baking powder
- 2 eggs
- 32g (¼ cups) melted unsalted butter
- 60ml (¼ cup) vegetable oil
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- ¼ tsp salt
Method
- Preheat your oven to 180 degrees.
- Combine the flour, baking powder, salt and unsweetened cocoa powder in a large bowl and whisk together.
- Microwave your semi-sweet chocolate chips for 25 seconds (or until they are soft) and whisk to a smooth paste in a bowl.
- In a separate large bowl, add your eggs and whisk until frothy.
- Add your melted butter, vanilla extract and vegetable oil into the same bowl and whisk until you have a smooth batter. Then add your sugar, melted chocolate chips, bourbon and whisk thoroughly.
- Add half of your dry ingredients mixture into the wet ingredients bowl and fold gently.
- Add the remaining half into the bowl and fold gently until the flour is mixed.
- Transfer the mixture into a greased square tin with baking paper and bake in the oven at 180 degrees for 20-25 minutes.
- Once done, cut your brownies in squares and allow to cool completely before delving in.
White Russian brownies
They’ve caught your eye already – introducing the truly irresistible White Russian brownies! If you think the much-loved cocktail is tasty, wait until you try the dessert version. The key ingredient to this recipe is the Kahlua coffee liqueur, which adds a rather adventurous kick.

Ingredients
For the brownies
- 160g (1 ¼ cup) sugar
- 160g (1 ¼ cup) flour
- 2 eggs
- 4 tablespoons softened butter
- 177ml (¾ cup) Kahlua Coffee Liqueur
- 64g (½ cup) unsweetened cocoa powder
- ¼ tsp baking powder
- ¼ teaspoon salt
For the topping
- 32g (¼ cup) flour
- 32g (¼ cup) sugar
- 453g (1 pound) softened cream cheese
- 1 egg
- 2 tablespoons softened butter
- 60ml (¼ cup) Smirnoff Red Label Vodka
Method
- Preheat your oven to 165 degrees.
- In a medium bowl, combine your 160g (1 ¼ cup) sugar and 4 tablespoons of butter.
- Add in your 2 eggs and 118ml (½ cup) of your coffee liqueur and mix well.
- Sift together your 160g (1 ¼ cup) flour, cocoa powder, baking powder and salt and stir into the wet mixture until blended.
- Spread half the mixture evenly into your baking tin.
- In a separate bowl, combine your 32g (¼ cup) flour, sugar and cream cheese and mix well.
- Stir in your egg, 2 tablespoons of butter and the vodka, mixing until smooth.
- Pour and spread the remaining mixture over the top of your brownie mix and bake for 35 – 45 minutes in the preheated oven.
- When the brownies are ready and cool, brush with the remaining coffee liqueur, chocolate shavings, and finally cut into squares.
