We’ve not had the snow in Llanelli on Sea!

Lot’s happening this week, done an interview for Runner’s World Magazine for the London Marathon and my reasons behind weight loss, how my life has changed and of course running, have a photo shoot with them soon once the weather improves and the photographer can get out to me.

Have a photo documentary starting this week after being approached by a student Photo Journalist at the University of Westminster, will probably be one along the lines of those done for National Geographic and likely be a slideshow that documents whatever story he’ll try and express through his art.  Will be nice to see how it turns out.

Thankfully at the time of writing,  we’ve not had snow in Llanelli on Sea and hopefully we’ll not see it either, despite the freezing cold, my training has continued as normal, was even out at 6am Monday morning when my gauge was showing -4c, there’s something quite special about Burry Port harbour and the view over the Gower just as the sun is rising and the stars are disappearing from view as the clouds are silhouetted against the horizon.

Another of my favourite runs, along the cycle path from Llanelli to Five Roads is another example of the sights and smells that so many people never get to see, the paths winds gently uphill passing the reservoirs at Swiss Valley, through the cutting in the rocks like a miniature Cheddar Gorge and following the path of the old Mynydd Mawr railway line, some amazing sights and it’s so sad that many people never get to see these sights.

This weather certainly sends us looking in the fridge for comfort foods and one of my all time favourites are home made chips!

Oven Baked Fat Free Chips / Wedges

  1. Potatoes and Fry Light Cooking Spray, pizza tray and baking parchment

  2. Preheat oven to 200 deg

  3. Peel and cut potatoes, par boil for 5 minutes in salted water and drain, allow to dry and cool on kitchen roll then shake in a mesh collander to rough up so they look almost feathery on the edges.

  4. Layer on a piece of Baking Parchment and spray generously with Fry Light Cooking Spray.

Cook in a preheated oven at 200 deg until brown, takes about 20 minutes, 5 mins before serving – remove from oven and spray Fry Light on top again to crisp them up more, remove from oven and coat with rocksalt, chilli spices etc – use imagination – they are probably the best chips you’ll ever make and entirely fat free, on top of that people don’t realise that potatoes contain more vitamin C that oranges…..(true)

Serve with baked beans and lean bacon / egg / tomato / mushrooms etc
