Here’s a nice tasty winter recipe from Punjab India feeds 3-4 persons.
Its very cheap to make, and very tasty!
In the area we have lots of food co-ops running , the basic ingredients are to be found in most of their vegetable bags and it;s a good way to support our local farmers and use local produce.
Ingredients:
- Medium onion(finely chopped)
- 2 carrots(diced)
- 2 medium potatoes(diced)
- Large cup of peas(fresh or frozen)
- Tin of chopped tomatoes
- Small chilli or ½ tea spoon chilli powder
- teaspoon cumin seeds
- ½ Garam masala
- ½ teaspoon turmeric
- Salt
- 2 cloves of chopped garlic
- Teaspoon of chopped fresh ginger.
- Vegetable oil
Method
- Put oil in to a pan on medium heat
- Put in onion cumin seeds..cook until onion browns
- Add ginger and garlic and potatoes and cook gently for a few minutes.
- Add turmeric and chilli and mix for 2 minutes
- Add salt and remaining spices and mix in tomatoes.
- Add carrots and peas.
- Cook on a gentle heat until carrots and potatoes are soft
Serve with Indian bread(chapatti, nan ) or with basmati rice.
