Here’s a really quick and simple dish that can be made for a special occasion or for the family.
I had this on a visit to Italy at a small town on the Mediterranean coast called San Remo, its so easy to make that I feel a bit of a cheat when I give to dinner guests.
Try it out on your friends and family and they will think they are eating fantastic Italian restaurant food!
For 4-5 people
Ingredients
- 500gms of spaghetti
- 200gm jar of green pesto
- 250gms of fine green beans
- Italian bread e.g. ciabatta or focaccia
So here we go….
- Fill a large sauce pan with water add a little salt, a spoon of olive oil and bring to the boil.
- In another sauce pan fill with water and bring to the boil.
- Cut the ends off the fine green beans but leave whole.
- When the water is boiling add the beans and gently boil until just soft. Drain the water.
- When the large pan is boiling add the spaghetti and keep boiling until the spaghetti is soft but still with a little bite “al dente”. Drain the spaghetti in a colander.
- Pour the pesto in the large saucepan add the beans and spaghetti and stir thoroughly.
- Serve in bowls with slices of Italian bread.
From start to finish about 30 minutes.
