Leek, Ham & Cheese Welsh Cakes by Beca Lyne-Pirkis
These savoury Welsh cakes are the perfect treat to enjoy on St David’s Day. Not only are they delicious and easy to make, but they are thrifty too, costing only 4 pence in energy. Beca says:

Leek, Ham & Cheese Welsh Cakes
Ingredients:
225g Self-Raising Flour
100g Salted Butter, cold & cubed
150g Extra Mature Cheddar, cut into 1cm cubes
70g Ham – a smoked ham will add a great flavour
½ Leek, washed and thinly sliced
Salt & Pepper
1 Egg (beaten with a little milk)
1 tablespoon Olive Oil
Butter to grease and sauté the leeks
Method:
In a small frying pan, place the sliced leek with a small knob of butter and a pinch of salt and sauté over a low heat until soft and sweet, remove from the pan to cool.
Place your thin based frying pan on the hobs to a low heat.
In a large bowl, add the flour, salt and pepper and rub the butter into the flour until the mixture looks like breadcrumbs. Add the cubed cheese, sliced ham and softened leek and stir to evenly distribute the ingredients.
Add the beaten egg and olive oil and using a regular cutlery knife, bring the dough together into a ball. Tip out the dough onto a lightly floured surface and roll out/flatten to 1cm thickness. Cut the dough into whatever size rounds you want – 3cm is perfect for canapés.
Grease your frying pan with a little butter and cook your Welsh Cakes until they are a golden brown. Don’t over-crowd the pan and grease the pan in between every batch.

Rhowch y genhinen wedi’i thorri mewn padell ffrio fach gyda chiwb bach o fenyn a phinsiad o halen a ffriwch dros dân isel hyd nes ei bod yn feddal ac yn felys, tynnwch o’r badell a’i rhoi i oeri.
Rhowch eich badell ffrio denau ar y pentan dros dân isel.
Mewn powlen fawr, ychwanegwch y blawd, halen a phupur a rwbiwch y menyn i mewn i’r blawd hyd nes bod y cymysgedd yn edrych fel briwsion bara. Ychwanegwch y ciwbiau caws, yr ham wedi’i dorri a’r cennin wedi’u meddalu a throwch i ddosbarthu’r cynhwysion yn gyfartal.
