Fluffy, American Style Pancakes
Go full American style and serve these beautifully fluffy pancakes with lashings of maple syrup and crispy bacon. Or if you’d prefer to really make the most of this special occasion, you could always add melted chocolate and banana or berries. Stack them up and dig in.
Spiced Shakshuka with Feta & Crunchy Pitta
For those who prefer a savoury brunch feast, turn up the heat with a spicy tomato shakshuka. Red pepper, onion, spices and tomato create a deliciously flavourful sauce to crack your eggs into. Toasted pitta makes the perfect dipping accompaniment, topped off with a mimosa for a virtual ‘cheers’.
Tropical Smoothie Bowl
As the weather is brightening and Spring is most definitely in the air, smoothie bowls are a fresh, healthy brunch option that can be whipped up in no time with any fruit you have in the freezer. Quick, easy and leaves plenty of time for catching up with the person you’re celebrating this Mothers Day, wherever they may be.
- 1 frozen banana
- 80g Frozen tropical fruit mix
- 1 scoop vanilla protein powder – optional
- 100ml Nut milk or water
- 40g granola
- Berries and Coconut flakes to decorate
Step 1: In a blender whizz up the frozen fruit, protein powder if using, and nut milk. It should be slightly thicker than a regular smoothie.
Step 2: Pour into a bowl and sprinkle with granola and any other toppings you like.
If Mother’s Day arrived out of nowhere this year, this French Toast is the perfect solution. Using slightly stale bread is the ultimate trick to getting the ideal French Toast consistency and the topping options are endless. Fry a few slices and let everyone build their own.
