Menter Moch Cymru helps pig enterprises thrive with practical butchery and processing courses

A Pig producer from Anglesey has encouraged pig farmers in Wales to take advantage of a series of bespoke butchery courses organised by Menter Moch Cymru.

David Harries of Tyn y Lon, Penysarn, Anglesey took advantage of the courses tailored to the needs of pig producers in Wales back in 2020 and said that the practical courses have enabled them as a family to add value to their produce and learn new skills that have been of benefit to their business.

“The course has given me so much confidence and experience to enhance our business of selling our own pork. Today I am able to have a full carcass from the abattoir and butchering it here myself on the farm to suit our own personal needs.”

“The courses also opened another opportunity for me – to be able to further process  our own pork in the future,” he added.

From ‘Practical Pig Butchery’, ‘Curing & Sausage Making’ to ‘Charcuterie for Beginners’ the project has held a number of sessions throughout Wales as part of its commitment to providing pig producers with access to expert training.

David added: “I would encourage pig producers to take advantage of the courses being offered. It is a chance to gain information about all the different pork joints and also to gain your own expertise in the world of butchering.  I really enjoyed the course .”

Menter Moch Cymru have a series of butchery courses in The Food Technology Centre, Coleg Menai, Llangefni next month, the Practical Pig Butchery will be held on Tuesday 15th March 2022and the Practical Processing Workshop: The Art of Curing & Sausage Makingwill be held on Wednesday 16th March 2022.
